Today I'm sharing a simple and delicious recipe from Schwartz for Sticky Pulled Chicken Rolls. This recipe is made with a grilling glaze from Schwartz Grill Mates, a delicious range of marinades that are designed to make barbecuing and grilling very easy and very tasty!
As a full time foodie I love to cook from scratch and very often make my own marinades, and I have a cupboard full of herbs and spices (many of them from Schwartz, coincidentally) to help me. However as a full time mum with a toddler on my hands, trying to fit working from home around the daily school run, I'm often short of time and am grateful to be able to grab the occasional ready made marinade like these to save time and make my life a little easier. You may have noticed that we're currently experiencing something of a heatwave here in the UK, which means that it's definitely time to pull out the BBQ, so I was delighted when Schwartz contacted me to see if I wanted try the Grill Mates range this week.
I chose to try this recipe because I really wanted to try making (and eating!) pulled chicken - a new technique to me. The recipe is quick and easy to follow and really very delicious!
Sticky Pulled Chicken Rolls
Ingredients (serves 6)
- 6 bone in chicken thighs with skin
- 1 sachet Schwartz Grilling Glaze Sticky BBQ
- 50ml cold water
To serve
- lettuce leaves
- coleslaw
- 6 bread rolls
Method
Cook the chicken on the BBQ for 25-30 minutes or until cooked through, turning regularly as you do so. Remove and allow to cool slightly. (note: you could also cook the chicken under a grill or bake it in the oven if you don't want to BBQ it)
Mix the BBQ Glaze with the water in a saucepan and heat for 3-4 minutes.
While the glaze is heating, pull the chicken apart with two forks and discard the bones and any excess skin.
Place the pulled chicken meat in a bowl and pour over the BBQ Glaze sauce, stir it to combine and serve in the bread rolls with crunchy coleslaw (note: the original recipe recommended brioche rolls but I couldn't find them so used wholemeal rolls instead). I also served up corn on the cob on the side - always a hit with my boys!
I have to say I really, really enjoyed this, as did the rest of the family. It was so easy to throw together and very tasty, a perfect combination for a hot summer's evening! I would happily recommend this range to anyone, and in fact have bought three more marinades to try, just because I liked the look of them. I foresee a lot of BBQ's in our near future!
