For this lunch I decided to try something a little different. I had saved a few cooked new potatoes from dinner the night before, and thought I’d see how a potato salad went down with Small Child. I added a hard boiled egg and so it became a potato & egg salad. I really wasn’t sure whether he’d like it or not, but thought it was worth a shot!
In his lunchbox Small Child had potato salad made with cold cooked new potatoes coated with a little mixed salad cream & light mayonnaise. I added some orange pepper strips and a sliced hard boiled egg, and a babybel cheese with a little flower cut from the wax on top.
For dessert he had strawberry hearts with a heart pick, a clementine with a little heart pick to decorate, and some yoghurt covered raisins in a heart shaped silicone cup, with a little sweetie pick to eat them with.
I was really pleased when these lunchboxes came back empty, as I really wasn’t sure how it would go down. Small Child said that he really enjoyed his egg & potato salad, although apparently he ‘wasn’t very keen’ on the egg yolk. He ate it anyway though!
