I made an early celebratory St Patrick's Day lunch for Small Child at the end of last week, and thought I'd share it with you today on the day itself. We don't particularly celebrate St Patrick's Day ourselves, but I know plenty of lovely Irish people who do, and I do like any excuse to make a themed lunch!
In this lunch Small Child had a fajita wrap leftover from our dinner the night before (marinated chicken breast strips, marinated onions & peppers, sour cream & chive dip, lettuce, cucumber, spring onion & a sprinkling of grated cheddar cheese), a rainbow of crudities (raw red, yellow & green pepper, cucumber sticks and carrot sticks), and a gold coin nestled in the cloud at the end of the rainbow (plain popcorn). The wraps were held together with 'emerald' jewel picks, and decorated with a shamrock cut from cucumber, using a mini heart pick.
For dessert he had a pot of organic yoghurt, decorated with a little rainbow of sprinkles, some black grapes and a sliced kiwi topped with a little green animal pick. Small Child must have the 'luck of the Irish', because somehow a couple more chocolate coins found their way into his dessert box too!
