After yesterday’s ‘fail’ with the cheese in Small Child’s lunch (incidentally he’s always happily eaten it up to now!), I thought I’d make him a lunch that I knew he’d enjoy. I save a little leftover rice from our dinner the night before, and used it to make a cold rice salad. Small Child has mentioned in the past that the lunches he’s had with rice are his favourite, so lets hope that taste hasn’t changed overnight too!
In this lunchbox he had rice salad, made up of leftover rice, small chunks of cucumber and yellow pepper and some raisins. The rice was decorated with a cucumber flower (with carrot centre) and some flower picks, at Small Child’s request. On the side he had some homemade roasted carrot houmous (recipe here) in a silicone cup topped with a carrot flower, with mini breadsticks and carrot sticks to dip in it.
For dessert he had frozen yoghurt flowers. I put a few flower sprinkles in each mould before topping with yoghurt, but they didn’t really show up once frozen. He also had a clementine opened up into a ‘flower’ and topped with a mini chocolate coin, and some red grapes.
I enjoyed the flowery theme that this lunchbox developed, but doubt I’ll get away with such ‘girly’ lunches for much longer; my baby boy is growing up!
