    5 Minute Dinosaur Lunch

    Disclosure: This blog post was commissioned by Capri-Sun.  I was compensated for the cost of ingredients and for my time spent creating and photographing this lunch.

    This dinosaur lunch box idea is so quick and easy, it takes just 5 minutes to create.  If you follow the steps below you'll find that making a healthy lunch that your kids will love really doesn't have to be complicated, and takes very little extra time or effort.

    5 Minute Dinosaur Lunch

    Ingredients

    • 1 kiwi fruit
    • 2 tbs houmous
    • handful sugar snap peas
    • 2 tbs sweetcorn
    • 1 wholemeal pitta bread
    • 1 slice cheddar cheese
    • 1 Capri-Sun Fruit Crush pouch

    Equipment

    • bone shaped ice cube tray/silicone mould
    • silicone cupcake cases
    • small lidded container
    • small sharp knife
    • dinosaur cupcake picks

    Method

    Prep in advance: The night before, spoon some houmous into one of the bone shaped compartments in your bone shaped ice cube tray, tap it on your work surface to get rid of any air bubbles and pop it into the freezer, leaving it overnight until ready to use.

    In the morning: Pop the pitta bread into your toaster.  Once toasted, leave to cool.

    Meanwhile, place 4 silicone cupcake cases into a lunch box.  I used square cupcake cases in my Happy Jackson Yay Lunch Box, but round silicone cases or cups (or any other shapes) or paper cupcake cases and any smallish lunch box would work too.

    Take your kiwi and cut it in half using a zig-zag pattern, as shown in the photo below, to turn it into a fun dinosaur egg! Pop it into one of the silicone cups in the lunch box.

    Half fill a small container with houmous and pop it into another of the silicone cups.

    Fill the remaining two silicone cups with sugar snap peas and a couple of spoonfuls of sweetcorn.

    Cut the pitta bread and cheese slice into spikes as shown in the photo below.

    Fill up any space left in the lunch box with the pitta bread and cheese spikes.

    Push a few dinosaur cupcake picks into the food to decorate, then take your frozen houmous bone out of the freezer and pop it into the container of houmous to finish.

    A quick note about the frozen houmous - houmous freezes beautifully and you can use any shape of ice cube tray or silicone mould to make fun shapes with it to match different themed lunches.  The frozen houmous helps to keep the rest of the lunch cool, and although it will defrost it should hold its shape until lunch time, whilst still being soft enough to eat.
